A 10" ring of ladyfingers filled with raspberry mousse and Chantilly
cream ($40). Charlottes can be prepared using any flavor of mousse including
chocolate. The charlotte can also be topped in raspberries when available

St. Honoré $35
Names after the patron saint of pastry. This is a very beautiful
dessert. A 10" ring of choux puffs filled with pastry cream then topped
with caramel. The puffs are placed on a ring of puff dough, which is on
a shortbread crust. The ring is filled with pastry cream and topped with
Chantilly cream.
Gateau Basque $30
8" round layers of pastry dough filled with rum flavored pastry

Choux pastry filled with vanilla, coffee or praline pastry cream
dipped in chocolate or caramel. Three sizes. Small (*minimum 4 dozen, $7/dozen);
Medium (*minimum 2 dozen, $10/dozen); Large (*single-serving, minimum 1
dozen, $16/dozen). Swans are beautiful choux pastry filled with Chantilly
cream.

Buche Pistache $50
A log-shaped dessert of Pistachio/almond or chocolate genoise filled
with chocolate filling and glazed with chocolate
Alhambra $45
Hazelnut flavored chocolate torte filled with chocolate ganache and
glazed with chocolate and truffles. This torte is a rectangular shape.
Passion Fruit Mousse Cake $40
9" Mousse is surrounded by coconut lace tuiles or ladyfingers. Topped
with glaze and/or fruit.
Bavarois de trois chocolates $55
An 8" round filled with layers of dark, white and milk chocolate
mouse separated with a thin layer of ladyfinger cake.
Millefeuile $50
Traditional and Praline. Three layers of puff pastry with layers of kirsch
flavored pastry cream and topped with decorative icing. Or, alternating
layers of praline/vanilla pastry cream and chocolate praline.
Opéra $50
A jaconde sponge cake heavily imbibed with coffee syrup and layered with
buttercream and chocolate ganache.
Chestnut Tartlettes $36/dz
An almond pastry crust filled with a layer of almond cream and topped
with a decorative chestnut mousse. The tartlette is dipped in chocolate glaze.
Passion Fruit Tartlettes $36/dz
An almond pastry crust filled with a thin layer of raspberry coulis,
then topped with passion fruit cream. The tartlette top is marbled with raspberry
coulis.
English Trifle $40
A large tall-sided glass serving bowl is layered with sherry-imbibed
cake, pastry cream/custard, and berries. Chantilly cream and sliced almonds
top with dessert for approximately 15 servings ($50 including serving piece)
